Vegan Nut Roast and Gravy!











This vegan/vegetarian nut roast dish is a perfect meat free option for a traditional Sunday roast and/or a festive season. This dish is a great vegetarian/vegan dish in the absence of meat ! The meaty flavour can be felt from the savoury taste of marmite and yeast! Different nuts e.g. almond and pecans and cashew nuts enriches the dish with its crunchy and nutty texture. Leeks and celery mixed with nuts gives makes this dish flavoursome and moist. Oregano, thyme and parsley are the aromatic herbs used for this dish as they go well together. The base of the gravy is from sautéed vegetables cooked in olive oil and simmered in vegetable stock with a bunch of aromatic fresh herbs i.e. parsley, thyme and oregano. To make the gravy gooey I added corn starch. Don't forget the garnish of the pomegranate on top! :)

Ingredients:

Vegetable

1-Chopped leeks 🌿

2-Chopped Celery 🌿

3-Chopped red onion 🧅

4-Chopped Mushroom 🍄

5-Marmite one tbsp

6-Garlic 🧄

7-Olive oil 🫒

8-Lime juice 🍋

9-Agave syrup

10-Corn starch

11-Salt and pepper🧂


Nuts

1-Cashew

2-Almond

3-Pecans

Instructions

🌿Step 1


Add the whole nuts together and grind them into small pieces. Then roast them slightly in a frying pan for a couple of minutes.


🌿Step 2


In a separate pan add the chopped celery, leeks, mushroom and red onions together. Then add the vegetable stock, live oil and the marmite to the mix and simmer in hot water for a good 10 minutes. In the meantime add the agave syrup and stir the whole mix together.

Once the vegetables got soft and cooked then sieve them and keep the stock for the gravy.

Add the vegetables and nuts together, mixed them well and lay them in an oven proof pan as you wish.

In a pan heat up the gravy while adding corn starch gradually until it becomes soft ands sticky.

For the garnish add chopped parsley and pomegranate seeds!
