Spinach Pasta

Pasta is a classic dish used worldwide. It is a good family cuisine and a perfect dish for dinner 😁. It can be eaten alone or added with various vegetables and legumes instead of meat, yet flavorsome and palatable. Pasta is a good source of carbohydrates. I try to use gluten-free pasta, but feel free to use any kind of pasta.

Ingredients


1- 1 x Penne Pasta

2- Spinach

3- 1x Shallots

4- Pesto paste (homemade you can refer to my previous post)

5- Lime juice

6- Walnuts

7- Saffron



Preparation


Step 1

Cook the pasta in boiled water and add a few Saffron petals to give pasta some flavour and a vibrant yellow colour


Step 2

Heat the pan, then add olive oil or cooking oil


Step 3

Fry onions and mushrooms altogether, add salt and pepper at the end add the spinach just to become soft


Step 4

Drain the pasta water and leave a little bit behind


Step 5

Mix the pasta and mushrooms together and cook a little bit more in the water to make it a bit juicy and soft ( I generally think that dry pasta is not probably the best to eat).


Step 6


Ready to serve!

  • I made this enough for one or two people,, you can adjust šŸ˜‰ 😊
