Mushtomato soup!

I love soup, mainly because it reminds me of my childhood memories. What is better on a cold winter night than a bowl of hot soup with a piece of bread next to it? My soup combines Tomato and Mushroom, which I call Mushtomato. I love the name! :)) The soup gives the mushrooms an earthy taste with the tomatoes' unique sweet acidity taste. Soup is a healthy option to lose weight.

Ingredients

  1. 2x Mushrooms 🍄

  2. 2 x Tomato 🍅

  3. 3 x cloves of garlic and/or shallots 🧄🧅

  4. Parsly 😁

  5. White wine vinegar 1 x tbs

  6. Thyme 🌿

  7. Salt and black pepper


Instructions

🍄 Peel the tomatoes. I usually put them in hot water 5 mins, much easier to peel with no waste of the good bits.


🍄 Fry the shallots and garlic together. It gives it a double the unique of garlic ,, but if you like it milder you can use either shallot or garlic.


🍄 Add salt and black pepper as much as you wish with vinegar.


🍄 Then chop the tomatos and mushrooms, add it to the rest and fry a bit more before add some vegetable stock.


🍄 Wait for it to simmer and leave it for 30 mins in a slow cook. At the end add some thymes.


🍄 Blend them altogether. Garnish it with parsley and vegan cream.



Notes

  • I made this enough for one or two people,, you can adjust 😉 😊

  • Don't forget to eat it hot!

  • Clean up the kitchen is my favourite part ! 😉 😊
