Homemade Vegan Nutloaf!

I was at my friend's house for a cozy Friday night. The night was great when I met their friends too. One of the best parts was eating the nut loaf for dinner while chatting with them.
The food was delightful, delicious, and divine. I could not resist not making it at home again! So I did, and yet it was tasty and flavorsome! The steps are easy to make and an excellent option for vegans and vegetarians.
Leeks and celery combined with nuts give this dish a nutty and moist texture. The gravy base is from sautéed vegetables cooked in olive oil and simmered in vegetable stock with aromatic fresh herbs, i.e., parsley, thyme, and oregano.
To make the gravy gooey, I added cornstarch. Remember the garnish of the pomegranate on top! :) Tamari sauce ( Japanese Soy Sauce) is a must for this dish!

Ingredients :
Vegetable
1-Chopped leeks 🌿
2-Chopped Celery 🌿
3-Chopped red onion 🧅
5-Marmite 1x tbsp
6-Tamari sauce 1x tbsp
5-Garlic 🧄
6-Olive oil 🫒
7-Agave syrup 1x tbsp
8-Corn starch 🌽
9-Salt and pepper🧂
Nuts
1-Cashew
2-Almond
3-Pecans
Instructions
🌿Step 1
Add the whole nuts together and grind them into small pieces. Then roast them slightly in a frying pan for a couple of minutes.
🌿Step 2
In a separate pan add the chopped celery, leeks, and red onions together while adding the vegetable stock, olive oil and the marmite to the mix and simmer in hot water and apple juice. Then you add the Tamari sauce for a good 10 minutes. At the end add agave syrup and stir for a couple of more minutes. I add nutritional vegan yeast to the mix as an option.

Once the vegetables got soft and golden then sieve them while keeping the stock for the gravy aside.

Add the vegetables and nuts together, mixed them well and lay them in an oven proof pan as you wish.

In the same pan heat up the gravy while adding corn starch gradually until it becomes soft and sticky.

For the garnish add chopped parsley and pomegranate seeds!
