Green Thai Curry

I dare to say that Green Thai Curry is one of my favorite dishes. Its origin is Thailand. Curry leaves have several properties, including taste, flavor, fragrance, and health benefits. This dish gives you some new and old senses! Once you start eating it, you do not want to stop! The earthy taste of mushrooms and the sweetness from the sweet potato and green broccoli go well as a perfect vegan dish.


Coconut milk makes the stew thickened and creamy, especially if you cook the stew gently on low heat. I advise being generous with coconut milk because it makes the hash dense and creamy.


Curry leaves and lemongrass are good combinations in most far eastern dishes. Lemongrass is a culinary herb from southeast Asia used by many nations and has a lemony and gingery taste with little minty and floral hints.


This dish has many robust flavors adding cumin, turmeric, and cilantro into the other ingredients. The secret of this dish is that every tastes separately.


The look of the dish also is warming to the eyes before you enjoy eating it! :)) I love the pale green-beige color. Of course, a bowl of white Jasmin rice with the stew treats you well!

Ingredients


  1. 100 gr Jasmine Rice 🍚

  2. Mushroom 🍄

  3. Sweet potatoes 🥔

  4. Lemongrass 🍋🌿

  5. Cilantro 🌿

  6. Coccunut milk 🥥

  7. Tumeric 🧂

  8. Salt and black pepper ( or chilli depending on your taste) 🧂

  9. Ground cummin 🧂

  10. Curry leaves 🌿

  11. Broccoli 🥦

  12. Lemon juice 🍋

  13. Vegan Yogurt as a side dish is optional


Instructions


🍛Step 1


Chop the mushrooms and sweet potatoes into even cubes 😋😁

Cut the garlic and lemongrass finely and fry them in a frying pan with sessame oil,, then add salt and pepper 😋😁

Add the mushrooms and sweet potatoes to the frying ingredients 😋😁

In the meantime add cummin and tumeric and curry leaves to the dish 😋😁

After 6 minutes add coccunut milk ( I used light one) to the ingredients and let it seamer on a slow heater until the stew becomes rich and creamy not watery 😋😁

Wash the rice and on a roasting pan with coconut oil roast the rice slightly and then add coconut milk into the rice as long as it covers it completely, and let it steam until the rice becomes fluffy and separated 😊😁
